This recipe was inspired by my paleo beef and broccoli on this site. Both recipes are accompanied by a bowl of quinoa but feel free to enjoy this dish with brown rice or any other rice of choice. Here are the healthy beef and broccoli ingredients.
Beef and Broccoli Ingredients
- Beef. Thin sliced skirt steak, or top sirloin steak is the perfect choice.
- Ginger & garlic. For flavor.
- Sauces. Coconut aminos, sesame oil, rice vinegar, and honey.
- Veggies. Sweet red bell pepper, onion, broccoli florets, and green onion.
- Arrowroot powder. This will be used as the thickening agent to create a glossy stir-fry sauce.
See the recipe card for quantities.
Instructions
The recipe can be made in a few steps; prepare the veggies, make the stir-fry sauce, fry the beef, and put it all together.
Stir-Fry Sauce
- Create the stir-fry sauce by combining the coconut aminos (or soy sauce), rice vinegar, sesame oil, honey, ginger, and garlic into a microwave-safe bowl. I like to use a Pyrex measuring glass because of the handle and lid.
- Microwave the mixture for 60 seconds.
- Add the arrowroot flour (or AP flour) to the mixture and use a whisk to combine ingredients until free of lumps. Place stir-fry sauce aside.
Fry the Beef
- Cut the steak into thin slices. This step can be easier with partially frozen meat. Season the slices with salt and pepper. Massage to coat evenly.
- Place a large skillet or wok over medium heat. Once hot, add the oil, and swirl to evenly distribute the oil covering the bottom.
- Add the steak. Stir-fry until the steak is golden brown and has a nice char, about 5-7 minutes.
- Remove the meat from the pan.
Fry and Steam the Vegetables.
- Add the onion, red pepper, and broccoli to the same pan. Season with an additional pinch of salt and pepper.
- Stir-fry for 1-2 minutes, just enough to combine ingredients evenly.
- Place a lid over the skillet and steam the broccoli for 3-4 minutes or until the broccoli turns bright greens.
Put it All Together
- Remove the lid, and return the beef to the pan.
- Pour the stir-fry sauce over all of the beef and vegetables. Stir-fry ingredients until the sauce is thick and glossy, about 3-5 minutes.
- Serve with a side of brown rice or quinoa. Garnish with green onion, sesame seeds, and cilantro.
Recipe Variations
Here are a few recipe variations for your healthy beef and broccoli.
- Spicy - add chili pepper flakes while cooking the meat to imbue heat.
- Veggies - add thin-sliced zucchini for a loaded veggie beef and broccoli version.
- Vegetarian - skip the beef altogether and add extra firm tofu for a vegetarian version. Stir-fry it just like you would the beef.
