As a wife and mother, I always have to deal with the "What am I going to feed my family?" question. That's when I decided to make these delicious Mediterranean-inspired egg bites. They're soft, fluffy, and packed with flavor (because eggs without flavor are just...eggs.)
I used real feta in brine to add more protein, but you can make dairy-free eggs by omitting the cheese and adding chicken breakfast sausage or chickpeas.

How to Roast A Bell Pepper (the Quick Way)
If you have a gas stove, this is the easiest way to do it:
- Place your bell pepper directly over the flame, turning it with tongs until it's charred on all sides.
- Once it's good and blistered, pop it into a Ziploc bag to steam for a few minutes.
- When it's cool enough to handle, peel off the skin, remove the seeds, and dice it up. That's it!
If you are unable to use this method, buy fire-roasted red bell peppers in a jar (just make sure it's packed in water and not oil).

Can I Swap the Feta?
If you're not a fan of feta, try goat cheese or cottage cheese in your eggs.
How to Serve and Enjoy
