Mediterranean Egg Bites with Feta and Bell Pepper

- 12 large eggs
- 1/2 cup soft feta cheese in brine (Turkish, Greek, or Bulgarian)
- 3 tablespoons chopped fresh chives
- 1 roasted red bell pepper, chopped
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder (or granulated garlic)
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 12-cup muffin tin or line with silicone cups.
- Whisk eggs in a large bowl until smooth. Add feta, chives, roasted bell pepper, oregano, garlic powder, salt, and pepper. Mix until combined.
- Pour the mixture evenly into each muffin cup, filling about ¾ full.
- Bake for 18–22 minutes, or until the egg bites are set and slightly golden on top (darker pans cook eggs quicker).
- Cool for 5 minutes before removing from the pan. Serve warm or store for later.
