This Lemon Dill Vinaigrette comes together in just 5 minutes! It's tangy with a subtle sweetness and a slightly sharp flavor, making it extra special.

This lemon dill vinaigrette is adapted from my Greek salad dressing recipe! What sets this dressing apart is the rice vinegar and dill, which give it a unique and tangy twist.

Dill Vinaigrette Ingredient Detail

This recipe relies on two crucial ingredients: rice wine vinegar and a sticky sweetener like pure maple syrup or honey. It's important to note that using vinegar varieties like red wine or balsamic vinegar will result in a darker dressing that won't complement the dill well. The sweetener helps to balance the sharpness of the acids.

Add the lemon zest, juice, rice wine vinegar, pure maple syrup, garlic, dill, salt, and pepper.

Stir using a whisk to dissolve the salt.

Slowly add olive oil while whisking until a smooth, pale yellow vinaigrette forms.

The vinaigrette should be yellow with bits of garlic and dill and have no pools of olive oil.

Use it to make a simple arugula salad, beet salad with goat cheese, or steak salad. The possibilities are endless... Heck, you can even use it for perfectly marinated chicken.

Ingredients

  • ¼ cup rice wine vinegar
  • 1 tablespoon pure maple syrup (or honey)
  • ¼ teaspoon black pepper
  • ½ teaspoon sea salt
  • ⅓ cup + 2 tablespoons extra virgin olive oil

Instructions

  1. Add the garlic, dill, lemon zest, juice, rice vinegar, pure maple syrup, salt, and pepper to a mixing bowl and stir using a whisk to dissolve the salt.
  2. Slowly add olive oil while whisking until a smooth, pale yellow vinaigrette forms.
  3. Leftover vinaigrette dressing can be stored in a jar with a lid for up to 5 days.
