We've been taking long walks in our neighborhood lately with refreshers in hand. The twins love buying fruit refreshers.
However, the daily habit of drinking those refreshers can surely add up. I knew it was time to give them a homemade version. I bring you my tried and true strawberry coconut pink drink refresher my family makes on repeat.
Strawberry Refresher Ingredients
- Strawberries: There's no added sugar, so make sure your strawberries are in season and sweet. If your strawberries are tasteless, your drink will be bland as well.
- Apple juice: Adds sweeten the drink.
- Lemon juice: Will give a bright tang.
- Coconut milk: Use coconut beverages rather than canned coconut milk. When mixed, the coconut milk adds a wonderful creamy consistency and a subtle pink tint.
I like to garnish these refreshers with fresh thyme to make it special.
The Process
- Step 1: Place the pint of strawberries into a high-speed blender along with the apple juice. Blend until creamy.
- Step 2: Pour the mixture over a fine mesh strainer to get rid of the strawberry seeds.
- Step 3: Transfer the strained mixture into a pitcher. Add the lemon juice.
- Step 4: Add ice to serving glasses. Pour the drink into the glass and top with coconut milk.
Optional: garnish with fresh strawberries and fresh thyme.

Strawberry Coconut Pink Drink Refresher
Ingredients
- 1 pint strawberries, tops removed
- 48 fl oz bottle of natural apple juice
- 1 large lemon, juice of
- 1 can coconut milk
- optional: ice, sliced strawberries, fresh thyme for garnish
Instructions
- Add the strawberries and apple juice to a blender. Blend until smooth.
- Pour the mixture through a fine mesh strainer to remove the strawberry seeds.
- Transfer the mixture to a large pitcher. Add lemon juice. Give a stir.
- To serve, fill glasses to the rim with ice. Pour in the strawberry puree. Drizzle a couple of tablespoons of coconut milk for each serving.
- Garnish with fresh sliced strawberries and fresh thyme.
