Question 1

Why use honey instead of sugar?

Accepted Answer

Honey adds moisture and a floral sweetness that goes well with blueberries and lemon. It also browns faster than sugar, so watch the muffins near the end of the bake.

Question 2

Should I use fresh or frozen blueberries?

Accepted Answer

Either works. If you use frozen blueberries, thaw and drain them.

Question 3

Are these muffins gluten-free?

Accepted Answer

No. Cake flour contains gluten. If you need a gluten-free option, try my gluten-free cornbread.
