Fattoush Salad Recipe (Lebanese Salad)

Fattoush salad made with crisp romaine, cucumbers, tomato, and fresh herbs with crispy olive oil-fried pita bread. 

Ingredients

For the dressing

  • 1/3 cup lemon juice
  • 1 garlic clove, minced (optional)
  • 2 tablespoons pomegranate molasses
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon sumac
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon cracked black pepper
  • 1/4 cup extra virgin olive oil

For the salad

  • 2 medium pita breads, separated, torn into pieces
  • Olive oil, for frying
  • 1 large romaine lettuce, chopped
  • 4 small Persian cucumbers, thinly sliced
  • 4 small radishes, thinly sliced
  • 3 green onions, thinly sliced
  • 2 medium tomatoes, cut into small wedges
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh parsley leaves, stems removed

Instructions

  1. Whisk together the lemon juice, garlic (if using), pomegranate molasses, red wine vinegar, oregano, sumac, salt, and pepper in a small bowl. Slowly drizzle in the olive oil while whisking until smooth and glossy. Set aside.
  2. Gently open each pita along the seam to separate the layers, then tear into bite-sized pieces.
  3. Heat a skillet over medium heat and add a few tablespoons of olive oil. Add the pita pieces, season lightly with salt (optional), and cook until golden and crispy, about 5 minutes. Transfer to a paper towel-lined plate.
  4. In a large serving dish, combine the romaine, cucumbers, radishes, green onions, tomatoes, mint, and parsley.
  5. Add the crispy pita on top, drizzle with the dressing, and serve.
