Lemon-marinated chicken thighs are cooked to perfection using a zesty marinade. Ideal for a meal on any given night of the week.

Ingredients

  • 1/4 cup olive oil
  • 2 teaspoons lemon zest (about 1 large lemon)
  • 1/4 cup lemon juice (about 1 large lemon)
  • 1 tablespoon wholegrain mustard
  • 4 cloves garlic, chopped
  • 1 teaspoon paprika
  • 1 teaspoon aleppo pepper
  • 1 teaspoon sea salt
  • 1/2 teaspoon coarse black pepper
  • 8 pieces chicken thighs, boneless, skinless
  • 1 large lemon, cut into wheels

Instructions

  1. Preheat the oven to 400°F.
  2. In a mixing bowl, add the olive oil, lemon zest, lemon juice, wholegrain mustard, garlic, paprika, aleppo pepper, salt, and pepper. Whisk ingredients until well incorporated.
  3. Place the chicken thighs in a baking dish. Pour the marinade over the chicken. With tongs, flip and coat each thigh until covered in marinade.
  4. Place the lemon wheels in between each thigh.
  5. Bake covered for 30 minutes.
  6. Remove the cover and bake for an additional 15 minutes for the final browning.
  7. Once an internal temperature reaches 160-170°F, take the baking dish out of the oven and allow the chicken to rest for 5 minutes.
  8. Serve while hot.
