This egg roll in a bowl is made with ground turkey, tender cabbage, and savory Asian-inspired flavors. It’s a simple, healthy dinner that reheats well for easy meal prep.

  • 1 1/2 pounds ground turkey

Vegetables & Aromatics

  • 3 cups shredded cabbage
  • 1 cup julienned or shredded carrots
  • 1 red bell pepper, thinly sliced
  • 3 green onions, sliced, white and green parts separated
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced

Sauce & Seasonings

  • 3 tablespoons tamari or gluten-free soy sauce
  • 2 tablespoons rice wine vinegar
  • 1 teaspoon sesame oil

Cooking & Garnish

  • 1-2 tablespoons avocado oil (or neutral cooking oil)
  • Salt and black pepper, to taste
  • Sesame seeds, for garnish (optional)

Instructions

  1. Heat a large skillet or wok over medium-high heat. Add avocado oil and ground turkey, season with salt and pepper, and cook, breaking it apart, until fully browned, about 5–7 minutes. Drain excess fat if needed.
  2. Push the turkey to one side of the pan. Add the white parts of the green onions, garlic, and ginger. Cook for 1 minute until fragrant.
  3. Add the cabbage and carrots, season lightly with salt and pepper, and stir-fry for 5–6 minutes until tender but still slightly crisp.
  4. Add the bell pepper and snap peas and cook for 1–2 minutes.
  5. Pour in the tamari, rice wine vinegar, and sesame oil. Stir well to coat everything and cook for another 1–2 minutes.
  6. Remove from heat and garnish with the green parts of the green onions and sesame seeds before serving.

Notes

Slice vegetables evenly so everything cooks at the same pace and stays crisp-tender.

Season in layers as you cook, small pinches of salt early help build flavor without over-salting at the end.

Use tamari for a fully gluten-free dish; regular soy sauce works if gluten isn’t a concern.
