- 1 cup shredded cucumber
- ½ teaspoon sea salt (+ a pinch)
- 1 cup goat milk yogurt
- 1 cloves garlic (finely chopped)
- 2 tablespoons chopped fresh dill
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- 1 pinch black pepper
- olive oil and fresh dill for garnish
Instructions
- Place the shredded cucumber in a colander, add a pinch of salt, and let sit for 5 minutes. Meanwhile, prepare the yogurt base.
- In a mixing bowl, whisk together the yogurt, garlic, dill, lemon zest, juice, and black pepper.
- Use the back of a spoon to press out excess water from shredded cucumber.
- Add the cucumber to the seasoned yogurt, mix, and garnish with a drizzle of olive oil and fresh dill.
- Enjoy right away or serve chilled.
Notes
To store tzatziki, transfer it to an airtight container and refrigerate for 3-4 days. Stir it before serving to ensure the flavors are well combined.
