Enjoy a delectable beef shank recipe, simmered in a flavorful broth with aromatic herbs and garlic, perfectly cooked and bursting with flavor, perfect for impressing guests or family.

Ingredients

  • 3-4 pounds beef shanks (about 4 pieces)
  • 2 teaspoon salt (plus a few pinches)
  • 1 teaspoon coarse black pepper (plus a few pinches)
  • olive oil for frying
  • 1 medium onion, diced
  • 1 medium carrot, diced
  • 3 stalks celery, diced
  • 1 head garlic, roughly chopped
  • 1/2 bunch fresh parsley, stems include (keep the parsley as is, not chopped, it will be removed later)
  • 1 tablespoon dried oregano
  • 2 tablespoons tomato paste
  • 3 cups water
  • fresh chopped parsley for garnish (optional)

Instructions

Sear the Beef Shanks

  1. To prepare the beef shanks, sprinkle salt and pepper on both sides of the meat.
  2. Place a large skillet over medium-high heat. Once the skillet has heated thoroughly, add a drizzle of olive oil. Place each shank flat side down. Cook in batches to ensure there's no overcrowding. Sear the beef shanks until each side turns golden brown.
  3. Once the meat is golden brown on both sides, remove them from the pan and place aside.

Sweat the Vegetables (mirepoix)

  1. In the same pan, add onion, carrot, celery, and garlic. Season with salt and pepper. Stir-fry until the onion has softened. Scrape any brown bits on the bottom of the pan.

Putting it Together in the Slow Cooker

  1. Place the beef shanks, and vegetable (mirepoix) mixture to the slow cooker.
  2. Add the parsley with stems, oregano, tomato paste, water, 2 teaspoons salt and 1 teaspoon pepper. Mix the tomato paste in a corner with the water. It will evenly distrubute during the cooking process.
  3. Place a lid over the slow cooker and cook on high heat for 4 1/2 hours.
  4. Once the time has elapsed, give it a quick stir to check for doneness. The beef shanks should detach from the bone easily when lifted.
  5. Remove the fresh parsley with stems from the slow cooker.

Serve

  1. Garnish with fresh chopped parsley.
  2. Generously top your favorite preferred starch such as mashed potatoes, polenta, or rice with chunks of beef and a ladle of broth with the marrow on the side.

Notes

Preparing for Guests 

If preparing this recipe in advance, leave it on low in the crockpot until ready to serve. Additionally, just before serving, I like to garnish with freshly cut parsley.

Lastly, you can present one bone with pieces of meat with the marrow remaining intact for each serving. Bone marrow lovers will adore this, especially if they use a smaller spoon to remove the marrow.
