5 large eggs

1/2 cup Good Culture 4% milk fat cottage cheese

1 teaspoon olive oil

1/4 teaspoon of sea salt (or to taste)

pinch of black pepper

Instructions

  1. Start by cracking the eggs into a mixing bowl. Add the cottage cheese, salt, and pepper. Whisk to combine the ingredients.
  2. Heat a nonstick or stainless steel pan over medium-low heat. Once nice and heated, add a teaspoon of olive oil. Spread the olive oil around to coat the bottom of the pan evenly.
  3. Pour in the eggs, and keep the temperature low. Continuously stir, slowly. Remember, do not turn up the heat and rush the process. Remove the eggs from the heat slightly before they reach your desired doneness. They will continue to cook slightly in the residual heat of the pan.
  4. Garnish with fresh dill, parsley, or chives.
