Description
Peach crisp made with sauteed peaches in fragrant cinnamon, topped with a chunky oat and chia streusel, then baked to perfection.

- 1 tablespoon butter
- 3-4 pounds peaches, skin and seed removed, roughly chopped
- 1/3 cup sugar
- 1/2 teaspoon cinnamon
- 1 teaspoon corn starch
- pinch of salt
Streusel Topping
- 1 cup flour, lightly packed
- 1/3 cup oats
- 1/2 cup sugar
- 1 tablespoon chia seeds
- pinch of salt
- 1/2 cup unsalted butter, melted
Instructions
- Preheat the oven to 350°F.
- Place a large skillet over medium heat.
- Add the butter, peaches, sugar, cinnamon, cornstarch, and a pinch of salt. Cook until the peach juice has released and slightly thickened.
- Add the peaches to a baking dish. Place aside.
- Add the flour, oats, sugar, chia seeds, and a pinch of salt to a mixing bowl. Mix to combine.
- Pour the melted butter over the dry ingredients. Combine everything with a fork or your hands until clumpy.
- Place the topping over the peaches in an even layer.
- Bake for 20-25 minutes or until the top is slightly golden.
- Cool for 15 minutes before serving.
