Peach crisp made with sauteed peaches in fragrant cinnamon, topped with a chunky oat and chia streusel, then baked to perfection.

Ingredients

  • 1 tablespoon butter
  • 3-4 pounds peaches, skin and seed removed, roughly chopped
  • 1/3 cup sugar
  • 1/2 teaspoon cinnamon
  • 1 teaspoon corn starch
  • pinch of salt

Streusel Topping

  • 1 cup flour, lightly packed
  • 1/3 cup oats
  • 1/2 cup sugar
  • 1 tablespoon chia seeds
  • pinch of salt
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F.
  2. Place a large skillet over medium heat.
  3. Add the butter, peaches, sugar, cinnamon, cornstarch, and a pinch of salt. Cook until the peach juice has released and slightly thickened.
  4. Add the peaches to a baking dish. Place aside.
  5. Add the flour, oats, sugar, chia seeds, and a pinch of salt to a mixing bowl. Mix to combine.
  6. Pour the melted butter over the dry ingredients. Combine everything with a fork or your hands until clumpy.
  7. Place the topping over the peaches in an even layer.
  8. Bake for 20-25 minutes or until the top is slightly golden.
  9. Cool for 15 minutes before serving.
