Try this refreshing kohlrabi salad recipe for a crunchy and flavorful dish perfect for summer. The homemade lime vinaigrette adds a tangy twist.

Ingredients

  • 1.5 pounds kohlrabi, outer skin removed, small diced
  • 2 cucumbers, skin peeled (optional), small dice
  • 1 Granny Smith apple, cored removed, small dice
  • 1 + ⅓ cup diced red cabbage
  • 3 green onion, thinly sliced
  • 1 bunch fresh cilantro, chopped

Lime Vinaigrette

  • ⅓ cup lime juice (about 4 juicy limes)
  • 2 tablespoons pure maple syrup
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ⅓ cup extra virgin olive oil

Instructions

Prepare the Vegetables

  1. Add the diced kohlrabi, cucumber, apple, cabbage, thinly sliced green onion, and cilantro to a large serving bowl. Place aside and make the vinaigrette.

Make the Vinaigrette

  1. Squeeze the lime into a separate bowl, then whisk in salt, pepper, and maple syrup until the salt dissolves. Finally, slowly drizzle in the olive oil while whisking continuously, ensuring a smooth and perfectly emulsified vinaigrette forms.

Put it All Together

  1. Pour the lime vinaigrette over the ingredients and give a generous toss.
  2. Serve immediately.
