1 medium red bell pepper, core and seeds removed, thinly sliced
1 medium head of broccoli, tough stems removed, and cut into florets.
green onion, sesame seeds, and cilantro for garnish
Instructions
STIR-FRY SAUCE
Create the stir-fry sauce by combining the coconut aminos (or soy sauce), rice vinegar, sesame oil, honey, ginger, and garlic into a microwave-safe bowl. I like to use a Pyrex measuring glass because of the handle and lid.
Microwave the mixture for 60 seconds.
Add the arrowroot flour (or AP flour) to the mixture and use a whisk to combine ingredients until free of lumps. Place stir-fry sauce aside.
FRY THE BEEF
Cut the steak into thin slices. This step can be easier with partially frozen meat. Season the slices with salt and pepper. Massage to coat evenly.
Place a large skillet or wok over medium heat. Once hot, add the oil, and swirl to evenly distribute the oil covering the bottom.
Add the steak. Stir-fry until the steak is golden brown and has a nice char, about 5-7 minutes.
Remove the meat from the pan.
FRY AND STEAM THE VEGETABLES
Add the onion, red pepper, and broccoli to the same pan. Season with an additional pinch of salt and pepper.
Stir-fry for 1-2 minutes, just enough to combine ingredients evenly.
Place a lid over the skillet and steam the broccoli for 3-4 minutes or until the broccoli turns bright greens.
PUT IT ALL TOGETHER
Remove the lid, and return the beef to the pan.
Pour the stir-fry sauce over all of the beef and vegetables. Stir-fry ingredients until the sauce is thick and glossy, about 3-5 minutes.
Serve with a side of brown rice or quinoa. Garnish with green onion, sesame seeds, and cilantro.
