Greek Yogurt Bowl with Orange-Kissed Cherries Recipe

Upgrade your breakfast routine with a Greek Yogurt Bowl featuring Orange-Kissed Cherries and Crunchy Almonds.

Ingredients

  • 2 cups cherries, pits, and stems removed (or use frozen pitted cherries*)
  • 1 cup orange juice
  • 1 teaspoon vanilla extract
  • 2 teaspoons pure maple syrup
  • 1 pinch sea salt
  • 2 cups Greek yogurt (I used whole milk Greek yogurt)
  • 2 tablespoons almonds, chopped

Instructions

  1. To make compote, combine the cherries, orange juice, vanilla, maple syrup, and sea salt in a saucepan.
  2. Put the saucepan on the stove over medium heat. Bring the mixture to a boil. Then, turn down the heat to low.
  3. Simmer, stirring now and then, until the cherries are soft and the sauce has thickened and reduced by half. This will take about 15 minutes.
  4. Transfer the compote to a bowl; stirring occasionally to cool it down. (Or refrigerate, covered, until chilled, about 1-2 hours.)
  5. To serve, divide the yogurt equally into 4 bowls. Then, top each bowl with compote, a drizzle of sauce, and a sprinkle of chopped almonds.

Notes

*When using frozen cherries, you will need to cook them for longer than 15 minutes due to the extra ice and water, about an additional 5 minutes, or until the sauce has thickened.
