¼ cup olive oil
¼ cup lemon juice
1 tablespoon whole grain Dijon mustard
1 tablespoon honey (or pure maple syrup)
1 teaspoon dried oregano
1 teaspoon smoked paprika
2 cloves garlic, chopped
1 teaspoon sea salt
¼ teaspoon black pepper
2 pounds chicken tender filets
fresh flat-leaf parsley, chopped, for garnish
Instructions
Make the Honey Mustard Marinade
Start with a large mixing bowl. Add the olive oil, lemon juice, mustard, honey (maple syrup also works great), oregano, smoked paprika, garlic, salt, and pepper into the bowl. Use a whisk to combine ingredients.
Add the chicken tenders. Cover the bowl with seran wrap and place in the fridge for 15 minutes.
Cook the Chicken Tenders (stove-top instructions)
Heat a skillet over medium-high heat. Once heated, add a thin layer of olive oil, swirl to coat the bottom of the pan, and place the chicken tenders flat-side down. Discard the remaining marinade.
Flip the chicken once golden brown, about 3-4 minutes.
Cook until an internal temperature reaches 165°F (73°C).
Remove the chicken from the pan. Rest for 2-3 minutes before enjoying.
