- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 tablespoon whole grain Dijon mustard
- 1 tablespoon honey (or pure maple syrup)
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 2 cloves garlic, chopped
- 1 teaspoon sea salt
- 1/4 teaspoon black pepper
- 2 pounds chicken tender filets
- fresh flat-leaf parsley, chopped, for garnish
Instructions
Make the Honey Mustard Marinade
- Start with a large mixing bowl. Add the olive oil, lemon juice, mustard, honey (maple syrup also works great), oregano, smoked paprika, garlic, salt, and pepper into the bowl. Use a whisk to combine ingredients.
- Add the chicken tenders. Cover the bowl with seran wrap and place in the fridge for 15 minutes.
Cook the Chicken Tenders (stove-top instructions)
- Heat a skillet over medium-high heat. Once heated, add a thin layer of olive oil, swirl to coat the bottom of the pan, and place the chicken tenders flat-side down. Discard the remaining marinade.
- Flip the chicken once golden brown, about 3-4 minutes.
- Cook until an internal temperature reaches 165°F (73°C).
- Remove the chicken from the pan. Rest for 2-3 minutes before enjoying.
- Garnish with fresh chopped parsley.
