Instructions
Make the chicken Patties
Add 1 teaspoon dried dill, oregano, onion, garlic, chili flakes, salt, and ¼ teaspoon pepper to the minced chicken.
Gently fold the spices into the meat until well distributed.
Measure 4 oz for each chicken patty.
Gently roll the seasoned meat into a loose ball, then flatten the ball into a patty. (Aim for ¾ inch in thickness.) Place aside.
Feta Mayo
Add the mayo, feta, cucumber, vinegar, remaining ½ teaspoon dill, and ¼ teaspoon pepper to a mixing bowl.
Mix until smooth and creamy with lumps of feta throughout. Place aside.
How to Cook in Pan
Use a heavy-bottomed skillet (like cast iron) over medium-high heat. Add a tablespoon of neutral oil (light olive oil, avocado) and let it shimmer.
Carefully place your formed chicken patties in the hot pan. Don't overcrowd the pan, cook in batches if needed.
Let the patties sear undisturbed for 3-4 minutes or until golden brown on the bottom. Gently flip the patties and cook for another 3-4 minutes, or until the internal temperature reaches 165°F (74°C)
Transfer the cooked patties to a plate and let them rest for a few minutes before serving.
How to Grill
Preheat the grill. Aim for medium-high heat (around 400°F). Lightly oil the grates to prevent sticking.
Place your formed patties directly on the preheated grill.
Grill for 4-5 minutes per side or until golden brown and cooked through with an internal temperature of 165°F (74°C).
How to Bake
Preheat the oven to 400°F (200°C).
Line a baking sheet with parchment paper for easy cleanup.
Place your formed patties on the prepared baking sheet. Bake for 15-20 minutes, or until cooked through with an internal temperature of 165°F (74°C).
For a crispier top, broil the patties on high for the last minute or two of cooking (watch closely to avoid burning).
Assemble the Burgers
Toast the hamburger buns for 30 seconds to 1 minute.
Smear a tablespoon of the feta mayo on the bottom bun, followed by the patty, lettuce, and tomato. Enjoy right away.
