This recipe takes juicy chicken thighs and smothers them in a creamy, dreamy marinade infused with tangy sour cream and fresh chives. It's a perfect weeknight meal that's guaranteed to please the whole family.

  • 1-2 pounds boneless, skinless chicken thighs
  • ½ cup sour cream
  • 2 tablespoons thinly sliced chives
  • 3 cloves garlic, minced
  • 3 tablespoons lemon juice (or rice vinegar)
  • 3 tablespoons olive oil
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 + ½ teaspoons sea salt
  • ¼ teaspoon black pepper

Instructions

  1. Using a whisk, mix the sour cream, chives, garlic, lemon juice (or vinegar), olive oil, onion powder, oregano, salt, and pepper in a large mixing bowl.
  2. Place the chicken thighs in the bowl, and toss to coat each piece fully in the marinade.
  3. Place in the fridge to marinate for 60 minutes or up to 12 hours.
  4. When ready to bake, preheat the oven to 400°F ( 205°C).
  5. Line a baking sheet with parchment paper and place the chicken thighs 1 inch apart.
  6. Bake at 400 °F ( 205°C) for 35-40 minutes or until the chicken's internal temperature reaches 165°F (74°C) when pierced with a cooking thermometer.
  7. Serve with a dollop of sour cream and fresh chopped chives.
