1 pound fresh green beans
2 tablespoons apple cider vinegar
1 lemon, zest and juice
1 tablespoon pure maple syrup
1 teaspoon mustard
3 cloves garlic, finely chopped
1 teaspoon oregano
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon coarse black pepper
Instructions
Preheat the oven to 400 °F.
While the oven is heating, wash the green beans thoroughly, remove dirt and debris, trim the end with a sharp knife, and remove the tough string. Dry and place aside.
In a mixing bowl, add the apple cider vinegar, lemon zest, lemon juice, maple syrup, mustard, garlic, dried oregano, olive oil, salt, and pepper. Use a whick to combine the ingredients.
In a large mixing bowl, combine the green beans, dressing, and toss until the dressing is coated onto the green beans.
Place the dressed green beans on a baking sheet with tongs to avoid pouring the extra dressing onto the pan.
Bake at 400°F for 10-15 minutes depending on the desired crunch. The less time baked, the crunchier it will be.
Transfer the roasted green beans onto a large serving plate. Garnish with earthy oregano or fresh chopped parsley.
